[Recipe] 羗葱蒸石班 / Steamed garoupa with spring onions and ginger

响英國有時都買到又平又好味嘅餸, 好似呢條石班, 只係£6, 足夠二至三人吃, 如果係香港, 我一定買唔到, 一定被君.

Here is my way of how to steam fish:

1. Use a knife to remove the fish scales (coz the fishmonger always won't do it thoroughly)
2. Wash the fish and let it drain dry
3. Use a big wok, put in boiling water, lid on and wait till it boils again.
4. Meanwhile, prepare sliced ginger and spring onions.
5. Put a few spring onions to the dish, then the fish, and sprinkle the fish with a pinch of salt
6. When the water boils again, put in the fish and let it steams around 10 minutes (depends on the size of the fish).  And always check to see if the fish is thoroughly cook with a fork, stick it to the middle of the fish and to see if the fish meat falls off from the bones, if yes then it is cooked.  Never mind it will ruin the presentation because you can always cover it with the spring onions and ginger toppings :-)
7.  While u know there's still 2 or 3 minutes the fish will be cooked, use a small frying pan (or a milk pan would be perfect), put in 3 to 4 tbsp of oil, when the oil is hot enough, put in the ginger and spring onions, give it a bit of stir and cook for 1 minute, till u see they are sizzling.
8. When the fish is ready, you might notice there are lots of "juices" on the plate, so you might want to pour them away before topping the fish with the oil + spring onions + ginger dressing, finally add in 2 to 3 tbsp of soy sauce.  done !!!

Roman lettuce
Garden peas
Parsley

Stir fried scallops with celery

The scallops are bought from billingsgate fish market this morning, £6 for 12, though they are not very large, but they are pretty fresh and sweet as usual. I fried them with lots of shallots, coz I ran out of garlic haha. Anyway it tastes really good. I didn't add in a lot of seasonings, just a little salt and sugar, we want the original seafood flavor!!!

Clams, fried with garlic, ginger, chillies and shaoxing wine

I bought these clams yesterday from the Chinese supermarket - Seewoo.
Actually every time I went there I always see these clams in the "fish tank" but I never have the guts to buy coz I never seen anyone buying them!!!!!
Luckily yesterday the "elderly" man standing in front of me, he bought half a pound of clams.  So I thought Ok I will follow him, he must know they are good.
And it turned out they taste really good.  Though their sizes are  not very big but they do have the fresh seafood taste.
I cooked them in a very Chinese way, quick frying them with garlic, ginger, chillies and shaoxing wine!!!  nice!!!

紅燒豆腐Ray Wings / Braised ray wings with tofu

I always see Ray Wings in Waitrose's fish counter but I never really want to buy them coz they look like some kind of shark fins :-S  Anyway I saw many fresh Ray Wings yesterday and they were the freshest among other fish, so i thought why not give it a try.

Google it wiki it, the closest thing I found is
http://en.wikipedia.org/wiki/Skate

Here u are I cooked them in the usual "紅燒" style
1. Wash the fish and pat dry
2. Put some salt and pepper over the fish and dust with some flour
3. pan fry them to 80% cooked, set aside
4. pan fry the tofu, add in garlic, ginger and spring onion
5. add in oyster sauce, salt, sugar, sesame oil, and water
6. put the fish back to the wok to allow it to cook with the sauce, lid on for 2 minutes
8. add in corn flour water to thicken the sauce. done!!!

The fish tastes good, very meaty with some soft bones.   I will try to cook it with the classic Cantonese way next time - steam it :-)
