Leek fritters

Bought a big packet of leeks few days ago, for making Chinese steam buns. 

While there were 5 long stalks of leeks in the packet, I only used 2 of them for making steam buns.

Thinking of how to use up the rest of the leeks, I made this leek fritters.  Yum!!!
